What do you do if you forgot to charge a guest a required fee?

From a guests perspective:
Honest guest would point it out to you - problem solved.
Dishonest guest would think - Yippee they forgot to charge me for my dog! And when you charge them they are not going to fight it cos they know you are right and will be bummed that they got caught not being honest.
So charge because that is your fee and they know it.

I will have to say that the only guests here who READ the reg form and the charges are lawyers. Everyone else just signs. I get an occasional, 'That looks right,' but rarely anything but a cursory glance before signing.
 
Sheesh 95% of our guests think they have paid in full for their entire stay! I am not sure where the heck they get that from, maybe the next B&B on their vacation, but not us. People don't read. Ever.

as option 3 most guests have no clue what they have booked or paid. I had an example of this today we have a company comes and books 3 rooms 3 nights but one chap is staying a 3rd night to finish packing up. He was the first one to arrive did they book me in for the 4th night - answer no but its no problem I'll bob it in as single occupancy for you for the 4th night so you don't have to move etc. His boss came to pay the bill £xxxx said is that fine oh yes including this extra night. was just about to punch his pin in when he said so bob is paying for his own 4th night! had to start again and could have charged him twice! does not surprise me at all.
 
If they haven't checked out yet, I would just be honest with them and tell that you made a mistake on their bill. "Could you please run their card again for the overlooked pet fee?" Geez, innkeepers are humans too! Everyone makes mistakes!
If they've already left, I'd let it go. The guests probably thought you charged for it when you ran their card, so best to be done with it if you can't speak to them in person.
