Today I made venison sausage for the first time. I found a recipe for maple venison sausage and tweaked it a bit. I will know tomorrow how it turned out. I used fresh sage so increased that a little but dried majorum and thyme so I cut back on those and upped the maple syrup (the REAL thang from WV) just a little. I have it in the fridge now "melding". I may fry a little of it tonight just to check it out.
My venison is already ground with some pork and in 1 pound packages so it is easy to do for a breakfast. I made mini-meatloaves of venison Sunday that were quite good. Loving this freezer full of meat.
