I have lemon curd so I'll give that a try.There's 2 things I do. I buy lemon curd at Trader Joe's and melt in the microwave, then drizzle it over fresh fruit.
No don't laugh! Try it before you discount it. So simple. Sour cream mixed with brown sugar. You need to add quite a bit of brown sugar so you can't really tell it's sour cream. Don't stir it too much or it gets very thin. The brown sugar will dissolve after a few minutes..

Yes, chopped candied ginger would be good. Spices/Flavours that go well with pineapple... Anise, Apple, Avocado, Bacon, Banana, Blue Cheese, Chili (it's really great!), Chocolate, Cilantro, Cinnamon, Coconut, Grape, Grapefruit, Cheese, Mango, Orange, Proscuito, Raspberry, Sage, Strawberry, Vanilla and White Chocolate
Cantaloupe isn't in my book, but melon is and it's... Almond, Anise, Ginger, Grape, Mint, Orange, Proscuito, Rose, Strawberry and Watermelon.
When mixing, you need to check both lists. We've tried the chili and pineapple and it's great. Doesn't have to be HOT chili, but it is nice when it is..
