(For those who don't know, I have a 9 - 5 office job. DH runs the inn alone during the week.)
So, I love to cook. I love a great presentation. I love to set a pretty table. DH is more of a business person. Not into cooking or hosting in the same way.
So on the weekends, I like to experiment with breakfast. I have perfected my individual crustless quiche and my blueberry pancakes. And on the weekends, we sort of up the offerings a bit. During the week, DH mostly makes scrambled eggs, bacon, sausage and English muffins. He is good at it and likes his routine. Most of our guests are one or two nighters, so not a huge need for variety.
Until this week. Three couples staying three nights. So we decided he would do the quiche to break it up. No issue. I chopped the veggies for him last night and showed him the recipe. It isn't that tough. But then, one of the guests said, "I read you have the best pancakes!" WELL, we can take a hint, so this morning, all by himself, DH made, not only the quiche, but the blueberry pancakes for his guests. All I did was clean the blueberries and chop the zucchini!
He said it went well and now his repertoire is expanded! Yay, Mr. Beach!

It's amazing out innkeeping forces us to expand our comfort zones! Good job Mr. Beachy!
 
Yea! That is a big step - and I will bet it is the first of many.
 
Great job!!!! My Dad loves to cook and plate his food. The rest of us are done with the first serving while he is still arranging his plate. He was a chef at restaurants so that's part of it.
 
Hey Beachie, would you be willing to share that fabulous blueberry pancake recipe? We're going to have a bumper crop this year and I'd love to be able to add this to my lineup. I use the sour cream pancakes I got on here this spring, which is great--I can dress them up but I haven't been happy with my blueberry recipe.

Not much to it. I add a generous pour of vanilla to my regular pancake mix.
I did perfect a method, though.
I tried mixing the blueberries into the mix and they didn't distribute evenly. So I tried dropping them on top of the pancake in the pan and they burned when I flipped the pancakes.
So my new method is, I scoop the batter and drop 4 blueberries into the batter, then pour onto the pan. Evenly distributed and covered with batter.

If you put them in the pancakes on the griddle, then immediately flip, no bleeding problem.
That flour trick never works for me in scones or muffins.

How small are these frozen blueberries? Ours are ginormous.The flour disappears into the "sweat" anyway.

Wild blueberries. Teeny tiny. We don't use those huge ones.
 
Coating the blueberries in flour prevents them from going to the bottom , example blueberry muffins

They freeze wild blueberries? Ours lose their taste if they are even refrigerated.
