Chia pudding. 2 Tbsp of chia seeds and 1/2 cup of filk (fake milk). a little natural sweetener (ie maple syrup). You can change it around, like adding cocoa, etc. Let it firm up in the fridge overnight (or for 30 minutes or so) and put it in a bowl. Cut up some fruit in nice lines, nuts, etc and lay them on top in lines. You can do the same with other things like... coconut film yoghurt, a fruit smoothie or even oatmeal. People love the lines. Other things you can put in lines, flax seeds (most people don't even realize that humans can't digest them and we need them ground, but don't tell them... they think it's healthy.) With oatmeal, you do need the GF oatmeal, if they really are Celiac. sunflower seeds, pumpkin seeds, etc.
You can even do it with eggs... tapioca pudding, rice pudding, etc.
And then there are the eggs. Eggs poached in salsa. Eggs fried. Eggs sunny side up with wine vinegar. Eggs fried in lots of oil. Oh and the Spanish omelette... peel potato and slice. Put on a plate and nuke for 3 minutes. Then put in bowl with eggs, a little salt and pepper... if you feel like it, some onion or onion powder, mix, put in oven safe pan and bake until no longer wiggly.
