What would you serve to a guest staying 10 days who does not eat gluten or dairy? Other than stating that and that the guest wants only organic foods, I don't know anything else as questions have not been answered. What would you make? (Keep in mind I don't do veggies.)
 
Scrambled eggs, eggs sunny side, eggs over easy, eggs over medium, eggs over well, hardboiled eggs, poached eggs, eggs in gluten-free toast, baked egg casserole, raw eggs.

Chia pudding. 2 Tbsp of chia seeds and 1/2 cup of filk (fake milk). a little natural sweetener (ie maple syrup). You can change it around, like adding cocoa, etc. Let it firm up in the fridge overnight (or for 30 minutes or so) and put it in a bowl. Cut up some fruit in nice lines, nuts, etc and lay them on top in lines. You can do the same with other things like... coconut film yoghurt, a fruit smoothie or even oatmeal. People love the lines. Other things you can put in lines, flax seeds (most people don't even realize that humans can't digest them and we need them ground, but don't tell them... they think it's healthy.) With oatmeal, you do need the GF oatmeal, if they really are Celiac. sunflower seeds, pumpkin seeds, etc.
You can even do it with eggs... tapioca pudding, rice pudding, etc.
And then there are the eggs. Eggs poached in salsa. Eggs fried. Eggs sunny side up with wine vinegar. Eggs fried in lots of oil. Oh and the Spanish omelette... peel potato and slice. Put on a plate and nuke for 3 minutes. Then put in bowl with eggs, a little salt and pepper... if you feel like it, some onion or onion powder, mix, put in oven safe pan and bake until no longer wiggly.

Eggs and gf bread for toast would do the trick. 10 days is a long time. For that long a visit, I'd invest in a gf pancake mix.

I like the dishes with the lines. Will try that with oatmeal.

If they don't and it's a well known language, you can use your mobile phone and the Google Translate app. It can do live translation from both language live. Click on the "Conversation" button. Or if you need to translate out loud only in one direction. Google Home does it. We use it with our Chinese guests.
 
Baked oatmeal - substitute the milk with water or almond milk (I use water). Just use GF oats. Pancakes - same substitutions as for the oatmeal. Baked pineapple toast - use unsweetened applesauce for the butter and almond or soy muilk for the milk. The Crock Pot Cereal recipe on this site- I just looked at the Bob's Red Mill 8-grain cereal I have - no-wheat so I would use that (check the label for GF - I have used 5-grain, 7-grain, 8-grain, and 10-grain at some point in time for this)

I have a dairy-free AND egg-free guest arriving soon and found this! Made them, and while I love the egg and dairy version better, these aren't bad! Will probably fill with fruit and/or meats/veggies

If you are doing this GF, use buckwheat flour. Don't use a mix of flours that contrains tapioca starch. Just trust me... they will puff up. You can also use other flours like rice flour or even corn starch, but tapioca starch will puff up on you all the time and ruin a crepe.

When you add the "only organic" on top of the GF, sounds like a fad dieter to me. You're a saint, Morticia! Fingers crossed the 10 days pass quickly.
 
Polenta. You can buy it in a roll and slice it, then saute. You can then add syrup and fruit toppings or a sauteed veggie medley. One of our go to vegan dairy free solutions.

Bob Redmill makes a prepackaged gluten-free, individual serving oatmeal that could be standby with a dairy free yogurt. I paid $.99 each at XMas Tree Shop and Job Lot but you can order online for convenience. Quaker also offers it in packets with maple & brown sugar.
Also, if you don't want to bother buying filk, you soak 1 cup of oats in 3 cups of water overnight, add a little sweetener and a little vanilla if wanted. Then put through the blender and run through a nut bag, a cheesecloth or a fine sieve and the liquid is oat milk. Use GF oats to make it GF and it lasts for a few days in the fridge. if you really need to, you can make cookies with the oats, eat them with fruit or just compost them. They will be gloopy, though.

Why no veggies? I love avocados for breakfast with my eggs ... or tomatoes ... or potatoes ... or spinach or brocolli.
When someone has real, for REAL dietary restrictions and they are staying awhile, usually I would ask what they eat and they would tell me. I don't eat a lot of wheat and dairy because it causes inflammation in me ... not an allergy, just an awareness and if I cheat, it's on me. I don't mind eating the same old thing over and over again.
