How Many Bacons, Sausages, Eggs ??? (guests asking for 5-7 slices of bacon)

Hello, lately we've been having guests (larger guys) asking for 5-7 slices of bacon and extra this, extra that ....... 4 eggs.
No one wants to be stingy, but when they are staying for 10 days it kind of adds up.
Wife is more "dig her feet in" type, me more accommodating. I've said a few times, "Oh, our supply shipment doesn't come until Tuesday (or whatever day will work best) and I'm just sorry, but 7 slices may cause us some problems a day or two from now."
How do you all deal with it? Suggestions? How to reply to these requests?

I ask guests if they want bacon, never how much. We only cook enough for the number of guests we are serving. 2 slices each. If someone wanted extra they'd have to wait until everyone was served to see if there were leftovers.
And, we only buy enough for the next breakfast. We don't have extra anywhere.

Thanks so much. We cook from a menu that changes daily but will do "eggs to order" for folks that aren't into quiche or frattatas. Eleven rooms (34 max persons) and our seating area can hold 14 at one time (so at full capacity we basically have 2 complete groups from 9:00 to 10:30) ....... no buffet.

I serve family-style and do 4 slices of bacon per person. Period. Unbelievably, sometimes there is bacon still on the serving platter after breakfast! Hehehe! Yum. When I do an egg dish (I bake everything) I do 3 eggs per person plus one to make the casserole/bake/whatever it is. I do not do fried, scrambled, etc.

Should I ask... are you budget priced? Are these people trying to have 2 meals at your expense?
What are you serving that they are filling up on that, instead of other things? Maybe it's time to look at what you serve and HOW you serve it.
Honestly, we don't really do breakfast meats, it's just not that much of a tradition for us. But maybe you need to rotate what's offered so that bacon isn't offered daily. For example, today it's a frittata with sausage, we don't have bacon today. If you order eggs, it comes with sausage. And if they go overboard with the sausage, time to either get cheaper sausage or flavours that they may be less interested in. For example, today it's turkey bacon instead. Or today it's vegetarian sausage Or today it's corned beef hash.
You can also set a price for extras. It's 2 eggs (or 3), a serving of bacon, breakfast potatoes, etc. Extras are $2 per serving... 2 more eggs, $2. 3 more slices of bacon, $2.

I serve muffins, a fruit dish, the entree (mini loaves of bread if an egg dish), bacon, ham, chops, or sausage (only one of those per day), coffee/tea. Many of my guessts have told me they did not need lunch because they were so full. Are your portions too small that they need to ask for more?
(I serve family-style because I stayed at a B & B that did plated that was beautiful and tasted wonderful, but I really wanted more but hesitated to ask for more. My family-style is so they have have as much as they want - but I still control how much is put on thetable.)

I serve plated, ask if they want more, but some things, like potatoes I put extra on the table so they don't have to ask.... the cheaper items. You gotta give them other things, especially if they are filling on the expensive stuff.

As I said in original, if they stay for 10 days (seem the 5-7 pieces of bacon guys always do) then it adds up. If a person is staying a night or two and on one morning they ask for some extra bacon ....... no biggie. Probably, I am looking more for suggestions on how to reply to someone who ....... on the SECOND day of a 10 day stay (who asked for 5 slices of bacon the FIRST day), is now asking for 5 slices of bacon AGAIN (and you can assume it will be that way from days 3-10). BTW, our bacon very good, we add seasoning from local tea/spice shop that folks really love (as in LOVE FIVE pieces of it, LOL). So, again ....... how would you word your response to "Mr 5 Pieces of Bacon" ?

We serve three slices. Usually our waffles, French toast, frittatas, etc. are so filling that we rarely get a request for seconds on meat. When we do, if we have extra we say sure.
The person you're citing *IS* taking advantage of you. Find a polite way to say no.

It's tough heading off the 10 day stay when you can give the 1 night stay extra with no problem!
So -
"We've made only enough so each guest gets a single serving. If you want to come back at 10 to see if there are any leftovers, please do."
"Let me check in the kitchen to see what we have. Sorry, we do not have any extra."
Ok, that's the first day. It's really the next days that will be the problem as you have been alerted to the situation. So, in that case, you have to charge extra.
"Yes! I'll let them know in the kitchen you want another breakfast. I'll just add that to your bill." You figure out what it's worth to you.
Generally better to go with 'yes, we can, and here's the cost to you' than trying to say no while feeding 30 guests!
The little piggies can then decide if it's worth the extra money everyday.

We can serve 12 at a time. Our bacon, meat, etc is based upon 2 pieces per person plus a few extra, and is self-service help yourself. Rarely ever, do we run out and have to cook more. Yes, that is excessive. And you are being taken advantage of.

I'm sorry, we allocated 3 per guest each morning. We can accommodate extras tomorrow, but be aware it's $2 per 3..

I would NOT serve baon every day under these circumstatances. Make it sausage for a couple days before bringing out the bacon again. Do sa fried potatoes with ham chunks rather than a separate meat. That way you will not have to say anything to Mr. GreedyGut.

Our breakfast is served off of a menu that changes monthly (or if I have guests staying more than two nights, I'll add specials so it doesn't get boring). There are two savory options, two sweet options and an eggs any style with potatoes, meat and toast option. After a particularly large wedding group of football sized guys, we added the following to the bottom of the menu....
"Our breakfasts are hearty portions. Should you wish to enjoy more than one there will be an additional charge added to your room"
Second full breakfast off of the menu $8.00
Side of two plain pancakes $3.00
Side of two specialty pancakes $4.50
Additional side of meat $2.25
Two eggs any style $2.00

I like to eat and breakfast may be my favorite meal, but as an operator you have a budget to consider.
Me, I don't like to nickel and dime folks, but you can't give away the store either. If you're having enough of these big hungry guys that it is a noticeable issue, why not approach it differently up front?
Room rate and breakfast $$ or Room rate and Hungry Man's breakfast $$$ or Super Breakfast for an added fee
Maxine and I sort of average out, me eating my food and half of hers, but with a group of guys perhaps they are doing something as a group, big breakfast and skip lunch due to their schedule, hopefully wouldn't mind the cost of a Super breakfast at an added cost and that way you don't have the bother of keeping up with who got extra bacon and billing it after the fact.

I can't recall being asked for additional bacon or eggs. Sometimes they'd take another muffin or jumbo biscuit. If they wanted more bacon, I would likely say I'd check to see if there was any left.
The exception to this was the guests who abused the buffet. It was buffet OR plated breakfast. People would opt for the plated breakfast and then go to the buffet table and take muffins, hard boiled eggs and yogurts and pack them into their packs saying to me, grinning ear to ear, 'Now I won't have to buy lunch.' No, because I just bought it for you! So, I did away with the buffet.
I do notice on your website you say

Sausage – A LOT, All Over Our Kitchen, PORK"
So, to me they are taking you at your word that you have a lot for them to gobble up. Like the 'all you can eat' buffet people who stuff themselves for no reason other than that they can. Maybe you want to re-word that a bit.
I wouldn't charge more mainly because I was working alone and couldn't be tracking down folks to ask for that additional payment. The few times that I needed to charge someone for something additional they protested.

WE make a pound of bacon every day and also put out sausage. (12 - 15 people) We often run out of bacon.
My theory is that no one makes bacon at home, so they love it on vacation.
If we have 20-something men in the house, we make extra.

LOL. I make the breakfasts; I feed people. If it were me, I'd double the amount I cooked for the group and let them scrap over it. People love bacon, it makes their day. Feed them.
