At 6:45 I hear guests in the dining room laughing and getting coffee. I drag myself out of bed. Early morning.
Gomez was up and had the coffee going but I figured I'd better help him out if guests were sitting down at that hour.
I tried to set the tables but 3 of them were already occupied by 7:15.
At 7:30 Gomez went to sit down in the office for a few minutes. I asked if anyone wanted to eat early. All hands went up.
Started breakfast early while still setting up. Gomez comes back as I'm plating up the first batch.
No complaints today about having to wait for a table!
 
I used to set the tables the afternoon or night before. But I could close off the dining area at night. Sounds like yours is open so they can wander in any time?
 
we do ours straight after breakfast but unlike mort we have a door to it and lock it.

Right. Entirely open dining and kitchen. Health inspector does not want tables set the night before because anyone can come along and touch the silverware.
As it was, no one budged when I tried to set the places so I lined the napkins up with the silverware on them and waited until I brought the plates over to move the silverware where it belonged.

We had the same discussion with our health inspector. He lets it go since he doubts anyone's going to wander around our Dining Room late at night touching all the silver or licking the coffee cups. Pretty nice guy.

no but what they do do is borrow things without asking and then you are missing bits here and there and have to track them down all over the building and from which setting ie check every setting first thing.

1 room left right away. The others drifted off. The last room was still in the dining room at 10. The last room was out the door by 11.
What surprised me the most was that it was raining. Raining + Sunday = no guests in the dining room until after 9!

We have a door too! I love to shut the door after hours. It gives us more room for us in the afternoon.
 
just re-read this, 6:45 they were in the dining room .... omy
I had a library with two senseos (remember those?) that was before I discovered keurig. Guests would congregate in there sometimes in the early morning or they'd be out on the deck or in the fog covered adirondack chairs, or they'd walk over to the dock or general store. It was a noisy little harbor! Fishing boats heading out at 4 or 5 in the morning I think woke them sometimes. Happily no one (usually) complained about that.
 
I would expect people to be happy with their coffee knowing that we have set breakfast hours. If you are happy to 'get breakfast out of the way' early, then it's a good idea to do it when you can.
But for us, we have a sophisticated kitchen dance that takes 1 1/2 hours and we have it down pretty much to the minute.

I was heading off a possible 'log jam' of guests all showing up at once. This way, 2 rooms were done before breakfast officially started and I had all the tables free for the next 5 rooms. If we can do that on a full house, it really helps keep the fidgeters happy because they don't have to wait.

Makes total sense. Generally, if we have early birds, we toss out the cream for the coffee, milk and juice and the baked goods and tell them we'll see them soon. But again, we are buffet, not plated. I can see the advantage to just getting going on a plated breakfast.

I have a door, just never close it. The water tank and the Keurig are in the dining room, but to my knowledge no one has ever come in during the night. I usually set the table between 10 and 11 when we have guests. Coffee gets made first in case they come down early (muffins made next for same reason). Hold off on the bacon until I am almost ready for them to come down.

You gotta love it when the guests feel comfortable and are enjoying what you offer. I must say, I miss ocean life. I would be sitting in your fogged in chairs in the wee hours myself. I am coming!
