As much as we could stand a slow morning I hate breakfast for one. Late arrivals. No idea if they are even going eat, but doubt it.
Can't do any laundry, cleaning, etc. So here we sit.
 
My biggest pet peeve also. Several years back, I changed my weekday breakfast to room delivery for this very reason (among others). It's a simpler breakfast, items that can be easily transported in a basket. They choose from a menu, and I include fresh fruit and sweet bread or muffin, plus juice or milk. I drop it at their door and they can enjoy it in their room or take outside to eat poolside. I love it and guests love it. No more waiting and getting irritated. A lot less work also.

Yes, I do it Monday morning through Friday morning, then do full formal buffet style in the dining room for all on weekends. I started with muffins and bagels and changed it to a menu of hot items that can be easily made and transported. I also let them pick the time they want delivery. Hot items are wrapped well to keep warm, and juice/milk is in a thermos. They choose their delivery time. If they choose 9 AM and they don't get up until 9:30 or 10, it will still be lukewarm. But honestly, if you have chosen the time and you can't get out of bed to walk 5 steps to the door to grab a basket, then you've got issues! They don't have to get dressed, brush their teeth, look presentable for anyone. They grab the basket and go back in. I knock and go. I don't wait for them to answer, I don't set up the table...nothing. I knock, they answer the door to a basket full of goodies with some fresh flowers and brochures about the town.

I know it's hard to wrap your mind around when you've been doing it a certain way for a long time. I made several adjustments along the way for what worked. This has worked really well for me for about four years.
 
I work at an inn that does only breakfast baskets, continental style, with delivery to room. People love it!
They have a savory item - a ham/cheese croissant, or slice of quiche, or ham biscuit; a sweet item - fruit bowl, yogurt parfait; and a sweet bread or muffin. Juice in a carafe, coffee or hot water in a thermos. It's a little too sweet for me but guests rave about it.
They work out the delivery issue (with almost 20 rooms) by having guests call to the office when they want breakfast, between 7 and 9:30. The housekeepers are trained to set up the breakfast baskets and fill them, and deliver them when notified. The rooms all have microwaves and mini-fridges, so things can be reheated if necessary.
I have stayed at inns that just do the basket delivery at a prearranged time (by you, or sometimes by them), and also have innsat at a B&B that does 'dressing coffee' - a small tray delivered to the room with coffee and biscotti before breakfast. I always wanted to do early coffee delivery at my B&B but never made the change.
Mileage varies for everybody, obviously, but there is more than one way to deliver a memorable breakfast that works for your guests.
 
We ask the person what time they would like breakfast. We sometimes do something a little special but we let them know this is a special item/service/new dish we hadn't tried yet, etc. that we don't do usually but since you are the only one…! Makes the person feel special! If the person is in the dining room, my aunt might grab a cup of coffee and sit if she feels like the person would like company. We also make sure the music is playing a little higher than usual so they don't feel so alone….(Our dining room can echo!)

We've been doing this for 16 years. It's not for everybody, but it works for us. I'm never waiting for someone to show up for breakfast.

I just want to say thank you. If I get to do B&B again I certainly like to try this approach out. I wonder how to get warm things to them warmed. It has to sit on there balcony or porch. Think an insulate bag would work??

Thank you . Yes it is hard to think out side my box. But I am really going to think and try and come up with ideas I could try.
Heck I got nothing else to do LOL just sit here every day and wait till insurance company gets their act together.

I wasn't on breakfast duty today since there were only four! So I got to sleep in!!!!! Tomorrow I got breakfast duty for four so see you tomorrow morning!

The housekeepers are trained to set up the breakfast baskets and fill them, and deliver them when notified. The rooms all have microwaves and mini-fridges, so things can be reheated if necessary.
I have stayed at inns that just do the basket delivery at a prearranged time (by you, or sometimes by them), and also have innsat at a B&B that does 'dressing coffee' - a small tray delivered to the room with coffee and biscotti before breakfast. I always wanted to do early coffee delivery at my B&B but never made the change.
Mileage varies for everybody, obviously, but there is more than one way to deliver a memorable breakfast that works for your guests..
As a guest, I've stayed at quite a few B&B/Inns that did a breakfast basket/tray delivery. The guest always picked the time within a window. The breakfasts were similar to what you described to offerings that were a bit more elaborate (fancy hot plated entree, French press coffee, gourmet baked goods). Everything was always fantastic.
When traveling alone, I especially LOVED it!! No awkward breakfast conversations from other guests or innkeepers pressed into service trying to keep the lone traveler entertained.

I thought about going that direction too as an innkeeper, especially when I had a full house which required me to be less flexible on seating times.
