Anyone Using A Commercial Dishwasher

With us booking more weddings each year, we're looking at replacing one of our two residential dishwashers with a Hobart LX18H Commercial model. Does anyone out there use a commercial dishwasher in their kitchen, either a hot-water version or one that uses sanitizer?
We love our 2 dishwashers, but the prospect of having clean dishes in 2.5 minutes is too sexy to not consider.

I have a commercial dish machine that fits under the counter where a residential dishwasher would fit. I replaced my Bosch when the circuit board went out, with a Fagor that washes at 190 degrees and rinses at 220.
I LOVE it! It has a choice of either a two or three minute cycle. I just use the three minute.
You can load, wash, dry and put away a load in five minutes. All parts can be replaced and there are no circuit boards or electronics to go bad.
I will never go back.

We've got a commercial dishwasher. We opted for the heat rather than chemicals. They're expensive and you have to pull in 220 if you don't already have it. 2.5 minute cycle. It does emit a lot of steam when opening and closing, so if you have a problem with moisture it may not be the best option for you. I didn't want all those chemicals going down my septic.
We like it except for burning my fingers every day because the dishes are so hot!

I am with you on the ho,t hot plates, but they sure do dry quickly.
I have used the steamy heat in my unit as a proofer and to thaw something for our dinner when I forgot to get something out ahead of time.

We've had the same one now for over 10 years since we opened with almost no problems. We didn't go with the Hobart because of the cost, so we purchased a Fagor and love it - half the price back then at $2700. Have had I think 3 repair calls in 10 years and they even sent us a part one time and hubby switched it out because we needed it immediately. You have to buy hi-temp soap and the rinse aid but I would never be without one.

You're braver than I! I would have waited until after the wedding so I could test it out and make sure everyone knew how to run it before giving it such a job!

I use one and love it. Only thing is the dishes come out rather wet ... and of course, we're pulling racks out and then putting more in to wash. Pot holders are a must as they come out HOT. Takes such a short time to run the cycle.

Best $1700 I ever spent. Speeds up dishwashing time, gets us out of the kitchen and into do room services so much faster, and for weddings it's awesome just to get the glass racks in, washed, and ready for wrapping in just 4 minutes.
Wish I'd bought this my first week here!

ours is a 30 min cycle from the previous one which was an hour which made a massive difference - 3 loads in an hour and a half as opposed to 1 and a half really gets the decks cleared!

I'm glad to hear!!!!!!! But if you had it the first week you were there, you wouldn't be so happy right now…..
